Red wines, particularly those from the South of France and Sardinia contain the highest levels of procyanidins which it's believed originate in the grape seeds and offer heart benefits. The colour in red wine is caused by leaving the grape skins in the wine during the process of fermentation. Colours can be dark like a red-brown colour to a more purple and a whole range of colours in between. You can use red grapes to make white wine simply by removing the skins that contain the colour before fermentation starts. The cooler the climate of the growing region the lighter the wine will be. In hotter climates the grapes are riped more and the skins are thicker which means they have more pigments within them. Age can also affect the colour of the wine. As wines age they can become darker in colour - more browner. This is caused by oxidisation by contact with the air in the bottle. As they age the red colour can break down and the purple aspect of the colour disappears. The more intense the colour the more body a wine is likely to have. Looking at wine is an essential part of the tasting process. |
